Frutos de palmeira bocaiuva (Acrocomia aculeata (Jacq.) Lodd.), coletados em Dourados (MS) e Presidente Epitácio (SP), foram analisados quanto ao aspecto biométrico, a composição química e as características físicas, visando a avaliar seu potencial alimentício. Os frutos de bocaiuva das regiões de procedência não apresentaram diferenças significativas entre si nas características biométricas. O rendimento médio da polpa foi de 42% em relação ao fruto inteiro, sendo superior ao encontrado na literatura para outros frutos de palmeiras. As determinações físicas e químicas da polpa dos frutos das regiões de Mato Grosso do Sul e São Paulo caracterizam a polpa como sendo pouco ácida (pH 5,70 a 6,29). This study aimed microencapsulating Attalea phalerata Mart. oil, containing high carotenoid and phenolic compounds content, with Arabic gum and gelatin, using the complex coacervation method. The yield, efficiency, morphology of microcapsules and content of phenolic compounds, carotenoids and antioxidant activity in different processes conditions (concentration of the filling, temperature and agitation speed) were evaluated. The results showed 88% of yield, efficiency up to 70% and a characteristic size of microcapsules. The amount of carotenoids was high in crude oil (394.84 µg of carotenoids/g oil) and the microencapsulation tests showed amounts of 19.19 to 166.40 µg of carotenoids/g oil. Abstract Pequi pulp oil, Caryocar brasiliense, is rich in carotenoids, antioxidant compound easily oxidized by the presence of heat, light and oxygen. In order to improve its stability, pequi oil was microencapsulated by complex coacervation using gelatin and Arabic gum as encapsulating agents. Twenty formulations were prepared using a 23 central composite rotational design. The influence of temperature, stirring velocity and core material in the oil coacervation were evaluated, aiming to preserve carotenoids present in the oil.
